Description

This Thermomix® casserole with chicken breast fillet, dried tomatoes, cream and herb cream cheese is a hearty main course with Mediterranean flavors. Mozzarella and Parmesan provide a creamy crust. Prepared in 45 minutes, of which 30 minutes are working time, the recipe yields 4 servings. Ideal as a family meal or for festive occasions.

Ingredients (13 ingredients)

  • 600 g Chicken breast fillet
  • 15 Stück dried tomatoes in oil
  • 200 ml Whipping cream
  • 100 g Herb cream cheese
  • 125 g Mozzarella
  • 10 g Parmesan
  • 10 g Basil leaves
  • 1 EL Vegetable oil
  • 1 Stück Garlic clove
  • nach Geschmack White pepper
  • nach Geschmack Salt
  • nach Geschmack Black pepper
  • Basil leaves, chopped

Preparation (12 steps)

Preheat oven and prepare casserole dish

Preheat the oven to 180°C fan. Lightly grease a casserole dish (approx. 29x20cm) with butter and set aside.

Prepare mozzarella and Parmesan

Drain the mozzarella and cut into cubes. Grate the Parmesan. Set both aside until further use.

Prepare tomatoes, garlic and basil

Remove the dried tomatoes from the oil, drain slightly and cut into cubes. Peel and finely chop the garlic clove. Roughly chop the basil leaves. Set everything aside.

Prepare chicken breast

Wash the chicken breast fillet, pat dry and divide into four or more pieces. Season with salt and white pepper.

Fry chicken breast

Heat 1 tbsp vegetable oil in a coated pan and fry the chicken breast fillets vigorously on all sides for approx. 5 minutes.

Place chicken breast in the casserole dish

Place the fried chicken breast fillets in the prepared casserole dish.

Chop garlic

Put the chopped garlic clove into the mixing bowl and chop for 3 sec./level 7.

Sauté dried tomatoes

Add the diced dried tomatoes to the garlic in the mixing bowl and sauté for 2 min./120°C/level 1. Scrape down the sides with the spatula.

Add cream and cream cheese

Add the whipping cream (200 ml) and herb cream cheese (100 g) to the mixing bowl and stir for 3 min./90°C/level 2 until the cream cheese has melted.

Season the sauce

Add the chopped basil (10 g) to the mixing bowl and stir in for 10 sec./reverse/level 1. Season with salt and black pepper from the mill.

Spread sauce and sprinkle with cheese

Spread the sauce evenly over the meat and in the spaces in the casserole dish. Sprinkle with the mozzarella cubes (125 g) and the grated Parmesan (10 g).

Bake casserole

Place the casserole dish on the middle shelf in the preheated oven and bake for approx. 20-25 minutes until the cheese is golden brown.
