Description

This dish is an absolute spring classic! The combination of tender penne, crunchy, fried asparagus and nutty butter is simply unbeatable. I especially like to make it when the asparagus is fresh from the market. The preparation is super easy and quick, so it is also perfect for a quick lunch or dinner during the week. The Parmesan and fresh basil round off the dish perfectly. A real treat that you absolutely have to try!

Ingredients (10 ingredients)

  • 300 g Pasta
  • to taste Salt
  • 500 g green Asparagus
  • 50 g Hazelnuts with skin
  • 4 tbsp Butter
  • 2 tbsp Oil
  • 1 clove Clove of garlic
  • to taste Pepper
  • 1 Topf Basil
  • 3 tbsp shaved Parmesan or vegetarian hard cheese

Preparation (8 steps)

Cook pasta

Thermomix® Setting
8 min/212°F/Speed 1 100

Add 300 g pasta, salt and 1 liter water to the mixing bowl and cook for 8 min./100°C/speed 1. Then drain through the simmering basket and set aside.

Prepare asparagus

Wash 500 g green asparagus, cut off the woody ends briefly and cut into bite-sized pieces.

Cook asparagus

Thermomix® Setting
5 min/212°F/Speed 1 100

Put the prepared asparagus, salt and 500 ml water into the mixing bowl and cook for 5 min./100°C/speed 1. Then drain through the simmering basket and set aside.

Roast hazelnuts and melt butter

Thermomix® Setting
3 min/122°F/Speed 1 50

Put 50 g hazelnuts with skin into the mixing bowl and chop for 3 sec./speed 5. Then add 4 tbsp butter and melt for 3 min./50°C/speed 1. Pour into a small bowl.

Sauté garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp oil and 1 clove of garlic to the mixing bowl and chop for 3 sec./speed 7. Then sauté for 3 min./120°C/speed 1.

Fry pasta and asparagus

Thermomix® Setting
3 min/248°F/Linkslauf Speed 1 120 Reverse

Add the cooked pasta and asparagus to the mixing bowl, season with pepper and fry for 3 min./120°C/reverse speed 1.

Add basil and Parmesan

Thermomix® Setting
30 sec/Linkslauf Speed 1 Reverse

Wash 1 pot of basil, pluck off the leaves, add together with 3 tbsp shaved Parmesan or vegetarian hard cheese to the mixing bowl and fold in for 30 sec./reverse speed 1.

Arrange the penne with asparagus in portions on plates and serve drizzled with the prepared hazelnut butter.
