Description

This dessert is a true classic that works wonderfully with the Thermomix®! The pears are gently poached and drizzled with a creamy chocolate sauce. I particularly like making this recipe in the fall when pears are in season. The combination of warm pears, cold vanilla ice cream and chocolate sauce is simply unbeatable. If you like, you can sprinkle some chopped nuts on top. A great dessert for special occasions or just because!

Ingredients (8 ingredients)

  • 4 piece Pears
  • 500 ml Water
  • 3 tbsp Sugar
  • 1 tbsp Lemon juice
  • 1 Pck. Bourbon vanilla sugar
  • 120 g Cream
  • 100 g Chocolate shavings, bittersweet
  • 4 Kugeln Vanilla ice cream

Preparation (6 steps)

Prepare pears

Thinly cut the bottom of the pears so that they can stand. Use a knife to remove the core in a wedge shape and peel the pears. Perform this step without Thermomix.

Prepare poaching liquid

Thermomix® Setting
5 sec/Speed 3

Put 500 ml water, 3 tbsp sugar, 1 tbsp lemon juice and 1 packet Bourbon vanilla sugar in the mixing bowl and mix for 5 sec./speed 3.

Poach pears

Thermomix® Setting
15 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Place the prepared pears in the mixing bowl. If the pears are not completely covered with liquid, add some water. Poach for 15 min./100°C/gentle stir setting/reverse rotation without measuring cup. The cooking time may vary depending on the ripeness of the pears.

Prepare chocolate sauce

Thermomix® Setting
5 min/122°F/Speed 2 50

Put 120 g cream and 90 g chocolate shavings bittersweet in the mixing bowl and melt for 5 min./50°C/speed 2.

Adjust consistency of chocolate sauce

Thermomix® Setting
10 sec/Speed 2

If the chocolate sauce is too thick, add a little more cream and mix for 10 sec./speed 2.

Arrange pears

Lift the poached pears out of the mixing bowl with a slotted spoon and let them drain. Arrange the pears on dessert plates, pour the warm chocolate sauce over them and add a scoop of vanilla ice cream. Garnish with the remaining 10 g chocolate shavings. Perform this step without Thermomix.
