Description

This wild herb pesto is an absolute taste sensation! I love to collect fresh ground elder and other wild herbs in the spring and use them to conjure up this spicy pesto. The garlic and Parmesan give it a strong note that goes perfectly with pasta, bread, or as a dip. It is super quick to prepare and brings the taste of spring to the table. A great recipe to enjoy the diversity of nature and create something special at the same time. Be sure to try it!

Ingredients (6 ingredients)

  • 100 g Ground Elder
  • other wild herbs
  • 6 Zehe/n Garlic
  • 100 g Parmesan or Pecorino, grated
  • 250 ml Olive oil
  • 75 g Pine nuts

Prepare Ground Elder and Wild Herbs

Wash the ground elder and wild herbs well, shake dry, and remove any thicker stems. Peel the garlic cloves.

Chop Herbs and Garlic

Put ground elder, wild herbs, and garlic cloves into the mixing bowl and chop for 5 sec./speed 7. Scrape down the sides with the spatula.

Toast Pine Nuts

Toast the pine nuts in a pan without fat until golden brown and then let them cool. Alternatively, the pine nuts can also be roasted in the Thermomix®: Put the pine nuts in the mixing bowl and roast for 3 min./120°C/speed 1 without the measuring cup.

Chop Pine Nuts

Put the roasted pine nuts in the mixing bowl and chop for 3 sec./speed 5.

Prepare Pesto

Thermomix® Setting
20 sec/Speed 4

Put Parmesan or Pecorino, olive oil, chopped herbs, garlic, and pine nuts into the mixing bowl and mix for 20 sec./speed 4. If necessary, help with the spatula.

Fill Pesto

Pour the finished pesto into a clean, sealable jar and cover with a layer of olive oil. This will make it last longer.
