Description

This garlic mustard pesto is an absolute harbinger of spring! I make it every year as soon as the garlic mustard sprouts. It is so easy and quick to prepare that you can always make it fresh. The intense garlic flavor of the garlic mustard harmonizes wonderfully with the roasted pine nuts and the spicy hard cheese. Perfect with pasta, on bread or as a dip for grilled food. And the best thing: it's vegetarian! A real all-rounder that should not be missing in any kitchen. Be sure to try it!

Ingredients (7 ingredients)

  • 200 ml Jars
  • 150 g fresh garlic mustard
  • 25 g Pine nuts
  • 70 g Hard cheese (piece)
  • 150 ml Olive oil
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Prepare garlic mustard

Wash 150 g fresh garlic mustard, pat dry and roughly chop.

Roast pine nuts

Roast 25 g pine nuts in a pan without fat until golden brown. Turn occasionally and then let cool.

Chop hard cheese

Put 70 g hard cheese in pieces into the mixing bowl and chop for 10 sec./speed 8.

Prepare pesto

Thermomix® Setting
20 sec/Speed 7

Add the chopped hard cheese, 150 g chopped garlic mustard, 25 g roasted pine nuts and 150 ml olive oil to the mixing bowl and process into a pesto for 20 sec./speed 7. If necessary, scrape off the edge with the spatula and repeat the process.

Season pesto

5 sec/Speed 5

Season the garlic mustard pesto with salt and pepper and mix again for 5 sec./speed 5 if necessary.

Fill pesto

Fill the finished garlic mustard pesto into hot rinsed jars (à approx. 200 ml), cover with a little olive oil and close tightly.
