Description

This bacon-wrapped chicken breast with spinach filling is a delightful and satisfying main course. I've been making this recipe for years, and it's always a hit! The combination of savory bacon, juicy chicken, and creamy spinach filling is simply irresistible. It's perfect for a special occasion or a cozy weeknight dinner. The pepperjack cheese adds a nice kick, and the garlic gives it a wonderful aroma. This dish is also great for meal prepping, as it can be easily reheated. Ingredients (7 ingredients)

  • 10 ounce fresh spinach leaves
  • 0.5 cup sour cream
  • 0.5 cup shredded pepperjack cheese
  • 4 clove garlic, minced
  • 4 piece skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
  • 1 pinch ground black pepper
  • 8 slice bacon

Prepare the spinach

Place the spinach leaves in the mixing bowl and cook for 3 minutes/100°C/speed 1. Use the spatula to push down the spinach if needed.

Add sour cream, cheese, and garlic

Add the sour cream, shredded pepperjack cheese, and minced garlic to the mixing bowl. Mix for 20 seconds/speed 3.

Prepare the chicken breasts

Lay the chicken breasts out on a clean surface and spoon some of the spinach mixture onto each one. Roll up the chicken to enclose the spinach.

Wrap with bacon

Wrap each chicken breast with two slices of bacon. Secure with toothpicks.

Bake the chicken

Arrange the chicken breasts in a shallow baking dish and bake uncovered for 35 minutes in a preheated oven at 190 degrees C. Then, increase the heat to 260 degrees C or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.
