Description

This dish is a wonderful combination of sweet and spicy flavors. The tender turkey breast harmonizes perfectly with the fruity mango-chili sauce. I especially like to make it in the summer when the mangoes are nice and ripe. The preparation is super easy and quick, ideal for an uncomplicated lunch or dinner. If you don't like it so spicy, you can of course use less chili. It goes well with rice, which wonderfully absorbs the sauce. An absolute favorite recipe that is always well received by friends and family!

Ingredients (11 ingredients)

  • 600 g Fresh turkey breast
  • 2 piece Mango(s) ripe
  • 400 ml Poultry stock duck stock
  • 200 g Cream
  • 1 etwas Sugar
  • 1 etwas Chili from the mill (to taste) ground lemongrass
  • 1 TL, gestr. Curry powder
  • 1 etwas Salt
  • 1 etwas Pepper black 250 g
  • 1 piece Onion(s)
  • 1 etwas Olive oil soy sauce dark

Preparation (7 steps)

Cook rice and prepare mango

Cook the rice according to the package instructions. Peel the mangoes and cut into pieces. Set aside about ¾ of the pulp. The other ¼ will be caramelized later. Peel the onion and cut into small cubes.

Prepare mango puree

Thermomix® Setting
10 sec/Speed 8

Put the prepared mango pulp (¾ of the amount) into the mixing bowl and puree for 10 sec./level 8.

Prepare sauce

Thermomix® Setting
10 min/212°F/Speed 1 100

Add poultry stock, mango puree and onion cubes to the mixing bowl. Season with chili, curry powder, sugar, pepper, salt and lemongrass. Cook for 10 min./100°C/level 1.

Add cream and reduce

Thermomix® Setting
3 min/194°F/Speed 1 90

Add cream to the mixing bowl and cook for another 3 min./90°C/level 1. Then season with salt, pepper, chili and sugar.

Caramelize mango cubes

Put some water and sugar in a pot or pan and bring to a boil. When the sugar turns slightly brown, add the remaining mango cubes and caramelize lightly. Then add the mango cubes to the sauce and let them steep briefly.

Fry turkey breast

Wash the turkey breast, dry it and cut it into strips. Fry the turkey breast strips in a pan in a little olive oil. Finally, season with soy sauce.

Serve

Serve the turkey breast strips with the mango-chili sauce and rice.
