Description

These plum spätzle with poppy seed butter are a wonderful dish for the cooler days! The combination of homemade spätzle, fruity plum compote and a nutty poppy seed butter is simply irresistible. I especially like to make this recipe in autumn when plums are in season. The preparation is a bit more complex, but the result is worth it. If you like, you can serve a scoop of vanilla ice cream with it. A real comfort food!

Ingredients (11 ingredients)

  • 200 g Flour
  • 2 piece Eggs (size M)
  • to taste Salt
  • 395 g Plum halves
  • 4 tbsp Cornstarch
  • Cinnamon
  • 4 tbsp Sugar
  • 1 piece Vanilla bean
  • 1 l Milk
  • 2 tbsp Butter
  • 2 tbsp Ground poppy seeds

Preparation (10 steps)

Prepare Spätzle dough

Thermomix® Setting

Put 200 g flour, 2 eggs (size M), 1 tsp salt and 150 ml lukewarm water into the mixing bowl and mix for 2 min/speed 4 into a viscous dough. Then let the dough rest covered for about 10 minutes.

Cook Spätzle

Bring a large pot of salted water to a boil. Add the spätzle dough in portions to the boiling water as noodles using a spätzle press or slicer. Cook for 1–2 minutes until the spätzle rise to the top. Remove with a slotted spoon and drain in a sieve.

Prepare plum compote

Drain 1 jar (395 g) of plum halves, collecting the juice. Mix 1 tbsp cornstarch and 3 tbsp cold water until smooth. Put the collected plum juice with 1 pinch of cinnamon and 1 tbsp sugar into the mixing bowl and bring to the boil for 5 min/100°C/speed 1. Add the mixed starch and simmer for another 3 min/100°C/speed 1. Fold in the plum halves and keep warm.

Thicken starch

Add the mixed starch and simmer for another 3 min/100°C/speed 1.

Prepare vanilla sauce

Cut the vanilla bean lengthwise and scrape out the pulp. Mix 4 tbsp milk with 3 tbsp cornstarch. Put the remaining milk (1 l), 3 tbsp sugar, 1 pinch cinnamon, vanilla bean and pulp and 1 pinch of salt into the mixing bowl and bring to the boil for 8 min/90°C/speed 2. Add the mixed starch and bring to the boil while stirring for 2 min/90°C/speed 2. Remove the vanilla bean.

Thicken sauce

Add the mixed starch and bring to the boil while stirring for 2 min/90°C/speed 2.

Heat spätzle in sauce

Thermomix® Setting
2 min/176°F/Linkslauf Speed 1 80 Reverse

Add the cooked spätzle to the vanilla sauce in the mixing bowl and heat for 2 min/80°C/reverse rotation speed 1.

Prepare poppy seed butter

Thermomix® Setting
3 min/122°F/Speed 1 50

Put 2 tbsp butter into the mixing bowl and melt for 3 min/50°C/speed 1. Add 2 tbsp ground poppy seeds and roast for 1 min/50°C/speed 1.

Roast poppy seeds

Thermomix® Setting
1 min/122°F/Speed 1 50

Add 2 tbsp ground poppy seeds and roast for 1 min/50°C/speed 1.

Arrange

Arrange the spätzle with the vanilla sauce and the plum compote and top with the poppy seed butter. Serve immediately.
