Description

This sausage ragout is a true comfort food, perfect for cooler days! The sausage, with its rich and decisive flavor, goes perfectly with the sweetness of the tomato puree and the freshness of the vegetables. I often prepare it for my family, and I must say it is always a success. The preparation is a bit long, but it is absolutely worth it. Ideal to enjoy with fresh pasta, especially with pici, typical of Tuscany. A rich and tasty dish, perfect for a Sunday lunch with the family. It can be prepared in advance and reheated when serving.

Ingredients (10 ingredients)

  • 500 g Pici
  • 300 g Sausage
  • 700 g Tomato puree
  • 1 piece Onion
  • 1 piece Carrot
  • 1 costa Celery stalk
  • 100 ml Red wine
  • 2 tbsp Tomato paste
  • 30 ml Extra virgin olive oil
  • 1 pinch Salt

Preparation (7 steps)

Preparation of the sautéed vegetables

Onion, carrot and celery stalk in the bowl and chop for 5 Sec./Speed 5.

Brown the vegetables

Thermomix® Setting
7 min/248°F/Speed 1 120

Add the extra virgin olive oil and sauté for 7 Min./120°C/Speed 1.

Brown the sausage

Remove the vegetables from the bowl and set aside. Remove the sausage from its casing, cut it into pieces and brown it in a pan with a drizzle of oil until golden brown. Transfer the browned sausage to the bowl with the vegetables.

Deglaze with red wine

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Pour the red wine into the bowl and let it evaporate for 3 Min./Varoma/Speed 1 without the measuring cup.

Cooking the ragout

Thermomix® Setting
30 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the tomato puree, tomato paste and salt. Cook for 30 Min./100°C/Speed 1/Reverse. If necessary, add a little hot water during cooking.

Cooking the pasta

Cook the pasta in plenty of salted water according to the instructions on the package.

Season and serve

Drain the pasta and season with the sausage ragout. Serve immediately.
