Description

This creamy Saffron Risotto is a classic of Italian cuisine and an absolute must for every lover of rice dishes. I have been making it for years and it always succeeds! The secret lies in the beef marrow, which gives the risotto an incredible depth and an incomparable taste. Preparation with the Thermomix® is very easy and saves time without sacrificing the authentic taste. Perfect as a main course for a cozy dinner or as a festive course for special occasions. A touch of black pepper rounds off the dish perfectly. Buon appetito!

Ingredients (8 ingredients)

  • 1 l Meat broth (Meat broth)
  • 320 g Carnaroli rice
  • 50 g Beef marrow (Beef marrow)
  • 80 g Butter (Butter)
  • 50 g Grana Padano (grated)
  • 1 piece Onion (small)
  • 0.5 packet Saffron powder (Saffron powder)
  • 1 pinch Black pepper (black pepper)

Preparation (9 steps)

Chop onion

Peel, quarter and place an onion (not too large) in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onion

Put half of the butter (amount see ingredient list) in the mixing bowl and sauté together with the chopped onion for 3 min./120°C/speed 1.

Add and melt beef marrow

Thermomix® Setting
5 min/212°F/Gentle stir speed 100 Reverse

Add the beef marrow (amount see ingredient list) to the onion-butter mixture in the mixing bowl and let it melt for 5 min./100°C/gentle stir setting. Make sure that the marrow melts slowly.

Sauté rice

Thermomix® Setting
3 min/212°F/Speed 1 100

Add the rice (Carnaroli) to the mixing bowl and sauté for 3 min./100°C/speed 1 without reverse. This seals the rice grains.

Prepare saffron

Put a ladle of hot broth (from the total amount) in a bowl and dissolve the saffron in it. Set aside.

Cook risotto

20 min/212°F/Gentle stir speed 100 Reverse

Cover the rice with a ladle of hot broth. Cook for 20 min./100°C/gentle stir setting/reverse. Gradually add the remaining broth as soon as the rice has absorbed the liquid.

Add saffron

Thermomix® Setting
5 min/212°F/Gentle stir speed 100 Reverse

Add the dissolved saffron to the risotto 5 minutes before the end of the cooking time and stir in for 5 min./100°C/gentle stir setting/reverse.

Mantecare (Refine)

Thermomix® Setting
1 min/Speed 2 Reverse

Add the remaining cold butter in cubes and the grated hard cheese to the risotto. Stir in for 1 min./speed 2/reverse until a creamy consistency is achieved. Then let it rest for 1 minute.

Serve

Arrange the risotto on plates and garnish with freshly ground black pepper and a few saffron threads. Serve immediately.
