Description

This stewed cucumber chorizo pan is a hearty and spicy dish that is perfect for a quick weeknight dinner. The combination of the light sweetness of the stewed cucumbers and the piquant spiciness of the chorizo is simply irresistible. I especially like to make this dish in the summer when stewed cucumbers are in season. The potatoes and peppers make the dish a complete meal. A dollop of crème fraîche rounds everything off perfectly and provides a creamy consistency. If you like it even spicier, you can add an extra chili. Simply delicious!

Ingredients (13 ingredients)

  • 500 g Chorizo
  • 1000 g Stewed cucumbers
  • 500 g Potatoes
  • 2 piece red Pepper
  • 2 piece Onions
  • 2 clove Garlic
  • 2 tbsp Oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 400 g Chopped tomatoes
  • 200 ml Vegetable broth
  • 150 g Crème fraîche
  • 4 Stiele Parsley

Preparation (8 steps)

Chop onions and garlic

Peel onions and garlic and place in the mixing bowl. Chop 3 sec./level 5. Scrape down with the spatula.

Sauté onions and garlic

Thermomix® Setting

Add 2 tbsp oil and sauté 3 min./120°C/level 1.

Prepare vegetables

Cut chorizo into slices. Peel cucumbers, halve, remove seeds with a spoon and cut cucumber into slices. Peel potatoes, wash thoroughly, rub dry and cut into cubes. Wash peppers, rub dry, clean and cut into cubes.

Fry chorizo

Heat oil in a large pan, fry chorizo slices in it for 1–2 minutes until crispy. Remove from the pan and set aside.

Sauté vegetables

Add cucumber, potato and pepper to the hot chorizo frying fat and fry on all sides for 2–3 minutes. Add onion and garlic, fry for 1–2 minutes and season with salt and pepper.

Simmer stewed cucumber chorizo pan

Mix chorizo back in and deglaze with tomatoes and broth. Simmer for 8–10 minutes over medium heat.

Season and refine

Stir in crème fraîche and season everything with salt and pepper.

Add parsley

Wash parsley, shake dry, pluck leaves from the stems and chop roughly. Garnish stewed cucumber chorizo pan with parsley and serve.
