Description

This pizza with summer vegetables is a light and tasty version of traditional pizza. I love preparing it with zucchini, eggplant and fresh tomatoes from the market. Fresh goat cheese adds a creamy and tangy touch that goes perfectly with grilled vegetables. It is an ideal recipe for a sunny lunch or a light dinner. The dough is easy to make and the pizza is ready in less than an hour. Feel free to vary the vegetables according to your tastes and the season. A little fresh oregano, chopped before serving, enhances everything! It is perfect for a vegetarian meal full of flavors.

Ingredients (12 ingredients)

  • 1 tbsp mustard
  • 1 tsp oregano
  • 200 g fresh goat cheese
  • 2 piece tomatoes
  • 1 piece zucchini (large)
  • 1 piece large eggplant
  • Salt or fine salt
  • Pepper
  • 3 tsp oil
  • 0.5 packet baking powder
  • 100 g white cheese (0% fat)
  • 180 g flour

Preparation (8 steps)

Preheating the oven

Preheat the oven to 180°C (th.6) for 10 minutes. This step is crucial for even cooking of the pizza.

Preparing the vegetables

Wash and peel the vegetables (zucchini, eggplant, tomatoes). Cut them into thin slices. This step can be done while the oven is preheating.

Preparing the dough

In the Thermomix bowl, add 180 g of flour and ½ sachet of baking powder. Mix 10 Sek./Stufe 3.

Adding the liquid ingredients

Gradually add 100 g of white cheese (0% fat) and 3 cc of oil. Knead 2 Min./Knetstufe.

Mixing the dough

Mix well until you obtain a homogeneous ball of dough. If the dough is too sticky, add a little flour. If it is too dry, add a little water.

Spreading the dough

Spread this dough on a pie dish covered with baking paper. Use a rolling pin to make the operation easier.

Garnishing the pizza

Crumble 200 g of fresh goat cheese. Brush the bottom of the dough with 1 tbsp of mustard, and half of the goat cheese. Then spread in a rosette and alternately a slice of zucchini, a slice of eggplant and a slice of tomatoes. Sprinkle with the rest of the fresh goat cheese and sprinkle with 1 tsp of oregano. Salt and pepper according to your taste.

Cooking the pizza

Bake for 25 minutes, monitoring regularly. The pizza is ready when the dough is golden and the vegetables are cooked.
