Description

These fried pizza fritters are a true Italian comfort food! The key to a perfect fry, that doesn't absorb too much oil, lies in the temperature. Preparing the dough is quick and easy with the Thermomix®, and the proofing, although it takes some time, is essential to obtain a soft and light consistency. I love them as a tasty appetizer or for a casual dinner with friends. Fresh tomato sauce and grated Parmesan cheese complete the dish, making them irresistible. Perfect for a family night or an Italian-style aperitif!

Ingredients (14 ingredients)

  • 300 g 00 Flour
  • 180 ml Water
  • 12 g Fresh brewer's yeast
  • 5 g Sugar
  • 20 ml Extra virgin olive oil
  • 5 g Salt
  • 400 g Peeled tomatoes
  • 1 clove Garlic
  • 20 ml Extra virgin olive oil
  • 5 foglie Basil leaves
  • 3 g Salt
  • 1 qb Peanut seed oil
  • 30 g Grated Parmigiano Reggiano
  • 1 qb Basil leaves

Preparation (9 steps)

Preparing the dough

Pour 300g of 00 flour into the bowl. Dissolve 12g of fresh brewer's yeast in 180ml of water with 5g of sugar. Add the dissolved yeast to the bowl with 20ml of extra virgin olive oil and 5g of salt.

Proofing the dough

Transfer the dough to a bowl, cover with plastic wrap and a tea towel and let it rise in a warm place for about 5-6 hours, or until doubled in volume.

Preparing the sauce

Insert 1 clove of garlic into the bowl and chop: 3 Sec./Stufe 7. Add 20ml of extra virgin olive oil and sauté: 3 Min./120°C/Stufe 1.

Cooking the sauce

15 min/212°F/Speed 1 100

Add 400g of crushed peeled tomatoes, 3g of salt and cook: 15 Min./100°C/Stufe 1.

Flavoring the sauce

Thermomix® Setting

Remove the garlic from the bowl and add 5 chopped basil leaves. Mix: 5 Sec./Stufe 2.

Forming the pizza fritters

After proofing, transfer the dough to a floured pastry board, work it lightly and divide it into balls of about 65 g. Flatten them to obtain round pizza fritters.

Frying the pizza fritters

Heat plenty of peanut seed oil in a high-sided pan up to 175°C. Fry a few pizza fritters at a time, turning them often and basting them with the hot oil.

Seasoning and serving

Drain the pizza fritters on paper towels. Season with hot sauce, 30g of grated Parmesan cheese and a few fresh basil leaves.
