Description

These margherita pizzettes are real comfort food! The recipe is very simple and perfect for a quick dinner or a tasty appetizer. The dough, prepared with the Thermomix®, is soft and light, and cooking in the air fryer makes them crunchy and golden. I love them! The preparation is really quick, but you need to consider the rising time, about 3 hours. A tip? Prepare the dough in advance and you will have pizzettes ready in a few minutes. Also perfect for children!

Ingredients (8 ingredients)

  • 250 g Type 00 flour
  • 150 ml Water
  • 1 tsp Sugar
  • 2 tbsp Extra virgin olive oil
  • 1 packet Dry brewer's yeast
  • 5 g Fine salt
  • 100 g Tomato sauce
  • 125 g Mozzarella

Dough preparation

Thermomix® Setting

In the Thermomix bowl, pour 250 g of type 00 flour, 1 sachet of dry brewer's yeast, 1 teaspoon of sugar and 2 tablespoons of extra virgin olive oil. Mix for 10 Sec./Stufe 3.

Adding water and salt

Gradually add 150 ml of water to the Thermomix bowl, mixing for 20 Sec./Stufe 4. Add 5 g of fine salt and knead for 2 Min./Knetstufe.

Dough rising

Transfer the dough to a lightly floured work surface and knead briefly with your hands until you obtain a smooth and homogeneous dough. Divide the dough in half and form two balls. Place the dough balls in two lightly floured bowls, cover with plastic wrap and let rise in a warm and dry place for about 3 hours, or until doubled in volume.

Rolling out and first cooking

Work one dough ball at a time. Roll out the dough with your hands on a floured work surface, forming a disc the size of the air fryer basket. Transfer the dough to the air fryer basket fitted with a grill. Season with 100 g of tomato sauce and cook at 200°C for 6 minutes. (This step takes place outside the Thermomix).

Adding mozzarella and final cooking

Add 125 g of mozzarella, previously cut into sticks, on the pizza and continue cooking in the air fryer for another 4 minutes at 200°C. (This step takes place outside the Thermomix).

Final seasoning

Complete with a drizzle of extra virgin olive oil before serving.
