Description

About this recipe

This creamy lentil and rice dish, often referred to as Kitchari, holds a special place in my kitchen. I first encountered it during a period of exploring Ayurvedic cooking principles, and it quickly became a staple. Kitchari is more than just a meal; it's a comforting and nourishing dish that's believed to promote balance and well-being. The beauty of this recipe lies in its simplicity and the harmonious blend of flavors and textures. The basmati rice provides a delicate, slightly nutty base, while the split red lentils melt into a creamy consistency, adding a subtle sweetness. The olive oil contributes richness and helps to sauté the aromatics. The onion, ginger, and garlic form the foundation of the flavor profile, creating a warm and savory base. Turmeric lends its vibrant color and earthy notes, while ground coriander adds a citrusy and slightly sweet element. Cumin seeds provide a warm, earthy, and slightly bitter flavor, and the chilli powder offers a gentle kick of heat. The vegetable stock brings everything together, ensuring a flavorful and moist dish. Cherry tomatoes burst with sweetness and acidity, complementing the other flavors, and the spinach adds a touch of freshness and a boost of nutrients. Finally, the red chilli provides an extra layer of heat and visual appeal. When using the Thermomix®, it's important to ensure the rice and lentils are thoroughly rinsed to remove excess starch, which can prevent the dish from becoming too sticky. When sautéing the onions and spices, keep a close eye on the temperature to prevent burning. The Thermomix®'s precise temperature control is a great asset here. During the cooking process, stir occasionally with the spatula to ensure even cooking and prevent sticking. This recipe is incredibly versatile. For a vegan version, simply ensure your vegetable stock is plant-based. You can easily adapt the spice blend to your liking. Garam masala, curry powder, or even a pinch of cinnamon can add unique dimensions to the flavor. Feel free to add other vegetables like carrots, peas, or cauliflower for added texture and nutrition. Kitchari is delicious on its own, but it also pairs well with various accompaniments. A dollop of plain yogurt (or coconut yogurt for a vegan option) adds a cooling contrast to the warmth of the spices. A sprinkle of fresh cilantro or parsley provides a burst of freshness. You can also serve it with a side of naan bread or roti for dipping. Leftover Kitchari can be stored in an airtight container in the refrigerator for up to 3 days. It reheats well in the microwave or on the stovetop. You can also prepare the rice and lentil mixture ahead of time and store it in the refrigerator until you're ready to cook it. This makes it a convenient option for busy weeknights.
