Description

This hearty liver stew is a savory main course that is quick and easy to prepare in the Thermomix®. The liver is first pan-fried and then braised with onions, garlic, red wine, and spices in the Thermomix®. Ideal for a quick lunch or dinner, especially in the colder months. The dish is rich in protein and iron and is well-suited for lovers of traditional cuisine. The preparation time is about 35 minutes and serves 4.

Ingredients (15 ingredients)

  • 500 g Liver
  • 2 Stück Onions
  • 2 Stück Garlic cloves
  • 40 g Clarified butter
  • 1 EL Medium-hot mustard
  • 1 EL Marjoram
  • 1 TL Thyme
  • 1 TL Sweet paprika powder
  • 0.5 TL Caraway seeds
  • 1 Prise Nutmeg
  • 100 ml Dry red wine
  • 100 ml Vegetable broth
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 1 EL Cornstarch

Preparation (7 steps)

Chop onions and garlic

Place 2 peeled and quartered onions and 2 garlic cloves in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions and garlic

Thermomix® Setting

Add 40 g clarified butter to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare liver

Cut 500 g liver into bite-sized pieces. Fry the meat in a separate pan with some clarified butter until it has browned.

Add liver and remaining ingredients

Add the fried liver, 1 tbsp medium-hot mustard, 1 tbsp marjoram, 1 tsp thyme, 1 tsp sweet paprika powder, 1/2 tsp caraway seeds, 1 pinch of nutmeg, 100 ml dry red wine, 100 ml vegetable broth, 1/2 tsp salt and 1/4 tsp pepper to the onions and garlic in the mixing bowl.

Simmer liver stew

Thermomix® Setting
15 min/212°F/Linkslauf/Speed 1 212°F Reverse

Close the mixing bowl and simmer the liver stew for 15 min./100°C/Reverse/speed 1. Leave the measuring cup in place.

Thicken sauce

Thermomix® Setting
2 min/212°F/Speed 2 212°F

Mix 1 tbsp cornstarch with some cold water and add to the mixing bowl. Simmer for another 2 min./100°C/speed 2 without Reverse to thicken the sauce.

Season and serve

Season the liver stew with salt and pepper and serve.
