Description

This plum and apple stuffed chicken is a perfect dish for the Christmas holidays, but not only! The combination of sweet and savory flavors makes it truly special. I always prepare it for Christmas and it is a great success. The chicken meat remains tender and juicy, while the filling is rich in aromas and different textures. A dish that is prepared a little in advance and that will make a great impression on your guests. Try it, you won't regret it! Ideal to accompany with baked potatoes or grilled vegetables.

  • Chicken
  • Dried plums
  • Apples
  • Butter
  • Eggs
  • Onions
  • Celery
  • to taste Brown sugar
  • Lemon
  • to taste Cinnamon
  • to taste Salt
  • to taste Black pepper

Preparation (10 steps)

Chopped onion

A peeled onion in the bowl and chop for 3 Sec./speed 5.

Sauté the onion

Add a knob of butter to the bowl and sauté for 3 Min./120°C/speed 1.

Prepare the apples and celery

Clean and dice the apples. Also clean the celery stalk, removing the outer filaments with a potato peeler and slice it. Set aside.

Cook apples and celery

Thermomix® Setting
5 min/212°F/Speed 1 100

Combine the celery and apples in the bowl together with the onions and cook for 5 Min./100°C/speed 1.

Prepare the filling

Transfer the dried plums to a bowl, add the juice and grated zest of a lemon, the brown sugar and the chopped rosemary and parsley. Also add the apple mixture and mix thoroughly.

Complete the filling

When the mixture has cooled, add an egg, salt, pepper and a pinch of cinnamon and mix well.

Stuff the chicken

Butter a baking dish well enough to hold the chicken, transfer the bird and stuff it with the plum and apple mixture just made and finally close the opening with a toothpick.

Prepare the chicken for cooking

Massage the chicken very well with the remaining butter and salt it generously on the surface.

Cook the chicken in the oven

Bake the chicken at 180°C for 2 and a half hours, basting occasionally with the cooking juices.

Serve

Remove the chicken from the pan and serve it whole on the table, portion it in front of your guests, accompanying it with the cooking juices.
