Description

This vegan dish combines the sweetness of pineapple with the spiciness of chili and the savory taste of mushrooms. The mushrooms are marinated and prepared in an aromatic spice mixture. Perfect as a quick and healthy main course for mushroom lovers and anyone looking for a vegan option. Preparation in the Thermomix® enables easy and time-saving preparation.

Ingredients (11 ingredients)

  • 1 Pineapple
  • 1 Chili pepper(s), red
  • 3 Onion(s), red
  • 1 kg Mushrooms, mixed (e.g. Portobello, oyster mushrooms, king oyster mushrooms)
  • 2 TL Lemon zest
  • 1 TL Cumin powder
  • 0.5 TL Allspice powder
  • 1 TL Paprika powder, smoked
  • Sea salt flakes
  • 1 Zehe/n Garlic, young
  • 6 EL Olive oil

Preparation (5 steps)

Chop onions and garlic

Add 3 red onions to the mixing bowl and chop for 3 sec./speed 5. Add 1 clove of garlic and chop for 3 sec./speed 7. If necessary, scrape down the sides with the spatula.

Sauté onions and garlic

Thermomix® Setting

Add 6 tbsp olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare mushrooms

Clean 1 kg of mixed mushrooms and cut into bite-sized pieces. Deseed and finely chop a red chili pepper.

Add mushrooms, pineapple and spices

Add the chopped mushrooms, chopped chili pepper, 1 pineapple (in pieces), 2 tsp lemon zest, 1 tsp cumin powder, 0.5 tsp allspice powder, 1 tsp smoked paprika powder and sea salt flakes to taste to the mixing bowl.

Cook mushroom-pineapple mixture

Cook the mushroom-pineapple mixture for 12 min./100°C/reverse direction speed 1. If necessary, help with the spatula.
