Description

The Asian noodle pan with egg and vegetables is a quick and inexpensive main course from the Thermomix®. The main ingredients are egg noodles, carrots, bean sprouts and leek, refined with fresh ginger. In just 30 minutes, a vegetarian meal for 4 people is created. Ideal for student kitchens or as a light Asian meal for the whole family.

Ingredients (16 ingredients)

  • 250 g Egg noodles
  • 200 g Carrots
  • 200 g Bean sprouts / Mung bean sprouts
  • 160 g Leek
  • 15 g Ginger
  • 4 Stück Spring onions
  • 4 Stück Eggs
  • 1 Zehe Clove of garlic
  • 2 EL Vegetable oil
  • nach Geschmack Salt
  • nach Geschmack Black pepper from the mill
  • 4 EL Soy sauce
  • 3 EL Sesame oil
  • 0.25 TL Black pepper
  • 0.5 TL Cumin
  • 0.125 Msp. Cayenne pepper

Preparation (10 steps)

Cook egg noodles

Cook the 250 g egg noodles according to the package instructions in a separate pot and then drain in a sieve. In the meantime, continue with the next steps.

Chop garlic and ginger

Thermomix® Setting

Put 1 clove of garlic and 15 g of ginger in the mixing bowl and chop for 3 seconds/speed 7. Scrape down the sides with the spatula.

Prepare carrots and leek

Peel the 200 g carrots and cut into sticks about 6 cm long and 4 mm thick. Clean the 160 g leek, wash and cut into slices about 5 mm thick. Clean the 4 spring onions, wash and cut diagonally into slices about 5 mm thick. Wash the 200 g bean sprouts and drain in a sieve.

Prepare sauce

Mix 4 tbsp soy sauce, 3 tbsp sesame oil, ½ tsp cumin, ¼ tsp pepper and 1 pinch of cayenne pepper in a small bowl and set aside.

Whisk eggs

Whisk the 4 eggs in a small bowl with a pinch of salt.

Prepare scrambled eggs

Heat 1 tbsp vegetable oil in a separate pan and fry the whisked eggs in it, stirring, until they are dry. Remove the scrambled eggs from the pan and set aside.

Sauté garlic and ginger

Heat 1 tbsp vegetable oil in a separate pan and sauté the chopped garlic and ginger in it for 1 minute.

Sauté carrots and leek

Add the carrot sticks and sauté for another 1 minute. Then add the leek slices for another 1 minute.

Add noodles and sauce

Add the cooked egg noodles and the prepared sauce to the pan, mix everything thoroughly and fry for about 5 minutes.

Stir in spring onions, sprouts and egg

Finally, stir in the spring onions, the sprouts and the scrambled eggs and season to taste with salt, pepper, soy sauce and sesame oil.
