Description

This recipe for braised beef brisket is an absolute classic and perfect for festive occasions or a cozy Sunday dinner. The beef brisket is braised until it is tender as butter and develops a wonderful aroma. I especially like to make it in autumn and winter when it is cold outside. The dish is easy to prepare, as the long braising time almost takes care of itself. Roasted potatoes or dumplings go perfectly with it. A hearty dish that is guaranteed to please everyone!

Ingredients (14 ingredients)

  • 3 piece Carrots
  • 2 piece Tomatoes
  • 2 Stange Celery stalks
  • 4 piece Onions
  • 4 Zweig Thyme
  • 4 Zweig Marjoram
  • 4 piece Bay leaves
  • 2 tsp Juniper berries
  • Salt
  • Pepper
  • 2.5 kg boneless beef brisket (Brisket)
  • 2 tbsp Mustard (mild)
  • Oil
  • 400 ml Red wine (dry)

Preparation (8 steps)

Prepare vegetables

Clean and roughly dice carrots, tomatoes, celery stalks and onions. Put the prepared ingredients together with thyme, marjoram, bay leaves, juniper berries, salt and pepper in a bowl and mix.

Prepare meat

Wash the beef brisket and pat it dry. Then rub with salt, pepper and mustard.

Chop vegetables in the mixing bowl

Put the prepared diced vegetables from the bowl into the mixing bowl and chop for 5 sec./speed 5. If necessary, use the spatula to scrape down from the edge and repeat the process.

Sauté vegetables

Add some oil to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sear meat

Sear the meat in a hot pan with some oil on all sides until it has a nice crust. Then remove from the pan and set aside.

Prepare braising

Place the seared meat on top of the sautéed vegetables in the mixing bowl. Pour in the red wine.

3,5 Stunden/212°F/Linkslauf Speed 1 100 Reverse

Close the mixing bowl and braise the meat for 3.5 hours/100°C/reverse rotation speed 1. During the cooking time, add some water or wine if the liquid reduces too much.

Season and serve

Remove the tender cooked meat from the mixing bowl and let it rest briefly. Season the braising sauce in the mixing bowl with salt and pepper and let it reduce a little if necessary. Slice the meat and serve with the vegetables and sauce.
