Description

This recipe for grilled chicken breasts with whisky and apple sauce is a delicious and different way to prepare chicken. The sauce, with its sweet and smoky touch, transforms simple breasts into a dish full of flavour. I have been preparing it for years and it is always a success, even with the little ones! The key is to marinate the chicken well so that it is juicy and full of flavour. Ideal for a quick meal during the week or to surprise your guests at a barbecue. Also, it can be prepared in advance, which makes it perfect for those busy days. Go ahead and try it, you will love it!

Ingredients (13 ingredients)

  • 4 piece Chicken breast
  • 30 ml Soya sauce
  • 100 ml Apple puree or compote
  • 1 piece Shallot
  • 1 tsp Fresh grated ginger
  • 1 clove Large garlic
  • 5 ml Extra virgin olive oil
  • 30 ml Whisky
  • 30 ml Barbecue Sauce
  • 15 ml Apple vinegar
  • 15 ml Honey
  • 1 piece Cayenne
  • 50 ml Chicken broth or water

Preparation (4 steps)

Preparation of garlic, shallot and ginger

Thermomix® Setting

Peel the garlic clove and the shallot. Place the garlic clove in the bowl and chop for 3 Sec./Stufe 7. Add the peeled shallot and the peeled and grated fresh ginger (one teaspoon) to the bowl and grate for 5 Sec./Stufe 5. Lower the remains of the walls of the bowl with the spatula.

Preparation of the marinade

Thermomix® Setting
10 Seg./Speed 4

Add the soya sauce (30 ml), apple puree or compote (100 ml), extra virgin olive oil (5 ml), whisky (30 ml), barbecue sauce (30 ml), apple vinegar (15 ml), honey (15 ml) and cayenne to the bowl. Mix for 10 Sec./Stufe 4.

Marinating the chicken

Remove 60 ml of the marinade and reserve. Pour the rest of the marinade over the chicken breasts in a resealable bag. Massage the chicken to coat well and leave in the fridge for at least half an hour, preferably a few more.

Cooking the sauce

Thermomix® Setting
10 min/212°F/Speed 2 100

Pour the reserved marinade into the bowl. Add the chicken broth or water (50 ml) and an extra splash of whisky. Program 10 Min./100°C/Stufe 2, without the measuring cup, so that the sauce thickens.
