Description

This dish of poultry with mushrooms and sweet wine is a real autumnal delight. The poultry, tender and tasty, is enhanced by the sweetness of the wine and the woody scent of porcini mushrooms. I have been preparing this recipe for years, and it always makes a splash with my guests. It's a comforting dish, perfect for cool autumn evenings or for the end of the year festivities. Accompanied by some potatoes, it is a complete and gourmet meal. Feel free to use other types of mushrooms if you don't have porcini mushrooms on hand. A real treat!

Ingredients (10 ingredients)

  • 2 kg Poultry
  • 20 cl Sweet white wine
  • 30 piece Porcino mushroom(s)
  • 25 cl Thick cream
  • 2 g Salt
  • 2 g Pepper
  • 2 g Cinnamon
  • 2 g Nutmeg
  • Oil
  • Butter

Preparation (9 steps)

Prepare poultry

The poultry must be cut into pieces: wings, thighs, fillets, breasts. The carcass is set aside for a broth. This step is done manually.

Soak porcini mushrooms

The porcini mushrooms are soaked in lukewarm water for 20 minutes to rehydrate them. This step is done manually.

Brown poultry

In a pan, brown the salted and peppered pieces of poultry in a mixture of oil and butter for 25 minutes, turning them over and basting them often with the cooking juices. This step is done manually.

Drain poultry

Remove the pieces of poultry from the pan and place them on absorbent paper to remove excess grease. This step is done manually.

Prepare sauce

Pour the sweet white wine into the Thermomix bowl. Add the thick cream, grated nutmeg and cinnamon. Season with salt and pepper.

Reduce sauce

Thermomix® Setting

Reduce the sauce by a third by setting the Thermomix to 15 Min./100°C/Level 2.

Add porcini mushrooms

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the drained porcini mushrooms to the Thermomix bowl and let it reduce for 5 Min./100°C/Level 1.

Add poultry and simmer

Thermomix® Setting
10 min/194°F/Linkslauf Speed 1 90 Reverse

Add the pieces of poultry to the Thermomix bowl and simmer for 10 Min./90°C/Reverse rotation Level 1.

Serve

Serve the poultry on a plate with some unpeeled new potatoes. This step is done manually.
