Description

This braised chicken adobo is a flavorful and comforting dish, perfect for a family dinner. Ingredients (10 ingredients)

  • 2 tablespoon canola oil
  • 3 pounds chicken drumsticks and thighs
  • 1 piece onion, coarsely chopped
  • 2 tablespoon minced garlic
  • 1 cup apple cider vinegar
  • 1 cup low sodium soy sauce
  • 1 cup water
  • 2 piece bay leaves
  • 10 piece whole black peppercorns
  • 1 piece cinnamon stick

Onion and Garlic Preparation

Add 1 onion, coarsely chopped, to the mixing bowl and chop for 3 seconds on speed 5. Scrape down the sides of the mixing bowl with a spatula.

Sauté Onion and Garlic

Add 2 tablespoons of canola oil and 2 tablespoons of minced garlic to the mixing bowl. Sauté for 3 minutes at 120°C on speed 1.

Add Liquids and Spices

Pour in 1 cup of apple cider vinegar, 1 cup of low sodium soy sauce, and 1 cup of water into the mixing bowl. Add 2 bay leaves, 10 whole black peppercorns, and 1 cinnamon stick.

Simmer the Sauce

Bring the mixture to a boil, then reduce heat and simmer for 5 minutes at 100°C on speed 1.

Cook Chicken

In a large skillet, heat canola oil over medium heat. Pan-fry 3 pounds of chicken drumsticks and thighs until golden brown, about 5 minutes per side. Remove the chicken pieces, and set aside.

Add Chicken to Sauce

Return the pan-fried chicken pieces and any juice that has formed to the mixing bowl. Cook for 40 minutes at 100°C on reverse speed 1.
