Description

This sweet and sour chicken stir-fry is a quick and easy weeknight meal that's packed with flavor. I've been making this dish for years, and it's always a hit with my family. The combination of tender chicken, crisp vegetables, and tangy sauce is simply irresistible. It's perfect served over rice or noodles. Feel free to add other vegetables you enjoy, such as broccoli or snap peas. This recipe is also great for meal prepping – just cook everything ahead of time and store it in the fridge until you're ready to eat.

Ingredients (10 ingredients)

  • 2 tbsp tomato ketchup
  • 1 tbsp vegetable oil
  • 1 piece onion
  • 1 piece red chilli
  • 1 piece red pepper
  • 1 piece green pepper
  • 2 piece carrots
  • 2 piece skinless chicken breasts
  • 125 g baby corn
  • 2 piece tomatoes

Preparation (6 steps)

Prepare the sweet and sour sauce

In a bowl, whisk together the pineapple juice, tomato ketchup, malt vinegar, and cornflour until well combined. Ensure the total volume is 300ml, adding water or stock if needed.

Chop onion, chilli, peppers and carrots

Sauté the onion

Add the chilli, peppers, and carrots to the mixing bowl and stir-fry for 3 Min. / 120°C / Level 1.

Add corn, pineapple and sauce

Add the baby corn, pineapple and the prepared sweet and sour sauce to the mixing bowl. Cook for 2 Min. / 100°C / Level 1.

Add tomatoes and finish cooking

2 min/212°F/Speed 1 100

Add the tomatoes to the mixing bowl and cook for 2 Min. / 100°C / Level 1 until the sauce thickens and the vegetables are tender.
