Description

This adobo chicken is a Filipino dish that I learned to make during a trip. The combination of soy sauce, vinegar and spices creates an irresistible sweet and sour taste. The chicken becomes very tender and goes perfectly with basmati rice. It is a simple dish to prepare, perfect for a family dinner or with friends. I often prepare it when I have little time but want something tasty and substantial. A pinch of chilli adds a spicy touch that enhances the flavors. Try it, it will win you over!

Ingredients (12 ingredients)

  • 4 persone Doses
  • 1 piece Chicken
  • 1 piece Onions
  • 1 clove Garlic
  • 2 foglia Bay leaf
  • 1 cube Chicken bouillon cube
  • 0.5 bicchiere White wine vinegar
  • 0.5 bicchiere Soy sauce
  • 1.5 bicchiere Water
  • 1 pinch Black pepper
  • 1 pinch Hot red pepper
  • 1 piece Basmati rice

Preparation (7 steps)

Rice preparation

Pour the rice into a saucepan, add water to cover and exceed the rice by at least one finger, add a pinch of salt and cook until all the water has been absorbed by the rice. This step is not performed in the Thermomix.

Chicken cutting

Cut the chicken into pieces of about 4 centimeters without removing the bone. This step is not performed in the Thermomix.

Preparation of the sautéed mixture

Insert the coarsely chopped onion and the clove of garlic into the bowl. Chop for 3 Sec./Stufe 5. Add the extra virgin olive oil and bay leaves. Sauté for 3 Min./120°C/Stufe 1.

Browning the chicken

5 min/248°F/Speed 1/Linkslauf 120 Reverse

Add the pieces of chicken to the bowl and brown for 5 Min./120°C/Stufe 1/Linkslauf. Make sure the chicken is browned evenly.

Chicken cooking

Thermomix® Setting
35 min/212°F/Speed 1/Linkslauf 100 Reverse

Crumble the chicken bouillon cube over the meat, drizzle with half a glass of soy sauce, a glass and a half of water, a pinch of pepper and chilli. Cook for 35 Min./100°C/Stufe 1/Linkslauf.

Adding the vinegar

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Add half a glass of white wine vinegar and continue cooking for 10 Min./100°C/Stufe 1/Linkslauf.

Serving

Serve the chicken adobo with the previously cooked rice. This step is not performed in the Thermomix.
