Description

This chicken with curry and coconut milk is a comforting and fragrant dish, perfect for an easy and tasty dinner. I often prepare it with Thai rice for a complete meal. The sweetness of coconut milk goes wonderfully with the spices of the curry, and the eggplant adds a touch of pleasant texture. Ingredients (10 ingredients)

  • 800 g Chicken breast
  • 250 g Thai rice
  • 1 c. à soupe Curry powder
  • 1 c. à soupe Oil
  • 1 can Coconut milk
  • 2 c. à soupe Soy sauce
  • 1 piece Eggplant
  • 1 bunch Basil
  • 1 piece Chili
  • 1 quantité suffisante Curry

Preparation of the curry paste

In the Thermomix bowl, mix 1 tablespoon of curry powder with half a can of coconut milk (about 200 ml). Mix 10 Sek./Stufe 3 to combine the ingredients well.

Cooking the chicken

Cut 800 g of chicken breast into pieces. In a frying pan, heat 1 tablespoon of oil over medium heat. Add the chicken pieces and brown them on all sides. Set aside the chicken.

Cooking the curry

30 min/203°F/Speed 1/Linkslauf 95 Reverse

Pour the curry and coconut milk mixture into the Thermomix bowl. Add the browned chicken. Program 30 Min./95°C/Stufe 1/Linkslauf. Gradually add the rest of the coconut milk (about 200 ml) during cooking.

Adding the eggplant and soy sauce

Cut 1 eggplant into pieces. Add the eggplant pieces and 2 tablespoons of soy sauce to the chicken in the Thermomix. Program 10 Min./95°C/Stufe 1/Linkslauf.

Final seasoning

2 min/203°F/Gentle stir speed/Linkslauf 95 Reverse

Add chopped fresh basil, chili to your liking and extra curry if needed. Mix gently 2 Min./95°C/Sanftrührstufe/Linkslauf to incorporate the flavors.

Cooking the rice

Thermomix® Setting
20 min/Varoma/Speed 4 Varoma

Meanwhile, cook 250 g of Thai rice in the Thermomix cooking basket. Fill the Thermomix bowl with 1 liter of water. Insert the cooking basket with the rice. Program 20 Min./Varoma/Stufe 4.

Final mixing

1 min/203°F/Gentle stir speed/Linkslauf 95 Reverse

Once the rice is cooked, pour it into the Thermomix bowl with the chicken curry. Mix gently 1 Min./95°C/Sanftrührstufe/Linkslauf to coat the rice well with sauce.
