Description

This red curry chicken with potatoes is a dish I often make when I crave something flavorful and comforting. The combination of red curry, coconut milk, and potatoes creates a creamy and enveloping sauce that pairs perfectly with the chicken. It's a simple dish to make, perfect for a family dinner or with friends. Boiled white rice is the ideal accompaniment to absorb all the goodness of the sauce. If you prefer, you can also add other vegetables such as carrots or peas for an even more complete dish. A real comfort food!

Ingredients (9 ingredients)

  • 500 g Chicken breast
  • 1 piece Onion
  • 500 g Potatoes
  • 30 g Red curry paste
  • 200 ml Coconut milk
  • 150 ml Chicken broth
  • 3 tbsp Extra virgin olive oil
  • Salt
  • Rice

Preparation (9 steps)

Chop the onion

Add the potatoes

Add 500g of diced potatoes and 100ml of chicken broth. Cook for 8 Min./100°C/Level 1.

Add the curry paste

Thermomix® Setting

Add 30g of red curry paste and 50ml of chicken broth. Mix for 20 Sec./Level 2.

Transfer the potatoes

Transfer the potatoes to a bowl and set aside.

Cook the chicken

In a pan, cook 500g of chicken breast cut into thin strips until it is well browned.

Combine chicken and potatoes

Add the browned chicken to the bowl with the potatoes and mix for 10 Sec./Reverse Level 1.

Add the coconut milk

Add 200ml of coconut milk and cook for 5 Min./90°C/Reverse Level 1.

Taste and, if necessary, add salt. Mix for 5 Sec./Reverse Level 1.
