Description

This delicious chicken with Marsala and prosciutto is a classic of Italian cuisine, perfect for a special dinner or a Sunday lunch. The combination of tender chicken, flavorful prosciutto, and Marsala sauce creates an explosion of flavors that will win everyone over. I often prepare it when I have guests, because it's simple to make and always makes a great impression! Fresh sage adds an aromatic touch that blends very well with the rest of the ingredients. Serve it with a side of mashed potatoes or grilled vegetables for a complete and satisfying meal. A true comfort food!

Ingredients (8 ingredients)

  • 1 piece Whole chicken breast
  • 4 slice Cured ham
  • 100 ml Marsala
  • 20 g Butter
  • 5 foglia Sage leaves
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 clove Garlic

Preparation (6 steps)

Chicken preparation

Take a whole chicken breast and divide it into two parts, trying to eliminate as much of the fat and central small bones as possible. Wrap each piece of chicken with the slices of cured ham.

Flavoring the butter

Thermomix® Setting
3 min/248°F/Speed 1 120

Put a clove of garlic in its skin in the mixing bowl. Add 20 g of butter and some sage leaves. Set 3 Min./120°C/Speed 1 to flavor the butter.

Browning the chicken

Remove the garlic from the mixing bowl. In a non-stick pan, brown the two pieces of chicken wrapped in prosciutto over medium-high heat until golden brown on all sides. This step is not performed in the Thermomix to ensure optimal browning.

Deglazing with Marsala

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Transfer the browned chicken to the mixing bowl. Add a pinch of salt and a grind of pepper. Deglaze with 100 ml of Marsala. Set 5 Min./Varoma/Speed 1 without measuring cup to evaporate the alcoholic part.

Final cooking

Thermomix® Setting
15 min/212°F/Speed 1 100

Cover the mixing bowl and lower the temperature. Set 15 Min./100°C/Speed 1 to complete the cooking of the chicken.

Serving

After the cooking time, remove the chicken breast and cut it into slices about 1 centimeter thick. Sprinkle the chicken slices with the cooking juices present in the mixing bowl. Garnish with fresh sage leaves and serve hot.
