Description

This roast chicken with potatoes is a comforting and flavorful dish, perfect for a Sunday lunch with the family or a friendly dinner with friends. I have been preparing this recipe for years and it is always a hit. The chicken, golden brown to perfection, is accompanied by melting potatoes and fragrant mushrooms. A little veal stock and aromatic herbs enhance the whole. Feel free to add other seasonal vegetables such as carrots or turnips for an even more gourmet version. Serve this dish with a green salad for a balanced and complete meal. A real delight!

Ingredients (14 ingredients)

  • 1 piece chicken
  • 5 piece potatoes
  • 1 can mushrooms
  • 2 piece onions
  • 1 container shallot
  • 1 tbsp margarine
  • 1 container garlic
  • 1 c. à s. flour
  • 1 c. à c. veal stock
  • 1 bunch chives
  • 1 bunch parsley
  • 1 bunch thyme
  • 1 pinch fine salt
  • 1 pinch pepper

Preparation (6 steps)

Preparation of the dish

Preheat the traditional oven to 200°C. Butter a gratin dish with a piece of margarine.

Preparation of the vegetables

Peel and cut the potatoes into medium squares. Peel and cut the onions into wedges. Put the potatoes and onions in the gratin dish.

Addition of mushrooms

Add a can of sliced mushrooms to the gratin dish.

Sauce preparation

Add water to the gratin dish for the sauce. Add a tablespoon of flour and a teaspoon of veal stock to the dish.

Chicken seasoning

Place the chicken in the gratin dish on the vegetables. Sprinkle the chicken with salt, pepper, thyme, garlic, shallot, parsley and chives.

Oven cooking

Put the dish in the traditional oven thermostat 7 (210°C), for about 45 minutes to 1 hour, or until the chicken is cooked and golden brown.
