Description

This chicken dish with apples and cumin is a real autumnal delight. The chicken thighs, tender and juicy, are enhanced by the caramelized sweetness of the apples and the spicy warmth of the cumin. The fresh cream brings an irresistible smoothness to the sauce, while a touch of Calvados enhances the whole with subtlety. It is a comforting and tasty dish, perfect for a family meal or a dinner with friends. I often prepare it in the fall, when the apples are at their peak. A real treat for the taste buds!

Ingredients (8 ingredients)

  • Chicken thigh
  • 4 piece Apple
  • 1 c. à soupe Cumin powder
  • 180 g Fresh cream 18%
  • 5 tsp Calvados
  • 60 g Butter
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Melt butter

Thermomix® Setting
2 min/122°F/Speed 1 50

Add 30 g Butter to the mixing bowl and melt for 2 Min./50°C/Speed 1.

Fry chicken

Remove the melted butter from the mixing bowl and heat in a pan. Fry the chicken thighs in it over high heat until golden brown. Then reduce the heat and simmer covered for 10 minutes.

Prepare sauce

Thermomix® Setting
20 min/194°F/Speed 2 90

Add the Calvados to the chicken thighs in the pan and flambé. Then add 180 g Fresh cream and 1 tbsp Cumin to the mixing bowl, season with salt and pepper and reduce for 20 Min./90°C/Speed 2 without the measuring cup.

Prepare apples

Peel, quarter and core the apples.

Caramelize apples

Melt the remaining 30 g Butter in a separate pan and fry the apple pieces in it until golden brown.

Serve

Arrange the chicken thighs on a serving plate, surround with the caramelized apple pieces and drizzle with the sauce from the mixing bowl.
