Description

This Mexican chicken recipe is a family favorite! It's incredibly easy to make and always a crowd-pleaser. The chicken breasts are seasoned with garlic, cumin, salt, and pepper, then cooked until golden brown. Topped with a flavorful salsa and plenty of cheddar cheese, it's baked until bubbly and delicious. Perfect for a quick weeknight dinner or a casual get-together. Serve with rice and a side salad for a complete meal. This dish is also great for meal prepping!

Ingredients (8 ingredients)

  • 4 piece skinless, boneless chicken breasts
  • 1 clove garlic, minced
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 pinch ground cumin
  • 1 cups salsa
  • 1 cups shredded Cheddar cheese

Garlic preparation

Place 1 clove of garlic into the mixing bowl and chop for 3 sec./speed 7.

Seasoning the chicken

Rub 4 skinless, boneless chicken breasts with the minced garlic, 1 pinch of salt, 1 pinch of ground black pepper, and 1 pinch of ground cumin. Set aside.

Browning the chicken

Heat a greased skillet over medium heat. Place the seasoned chicken breasts in the hot skillet and cook until browned on both sides and no longer pink, approximately 10 to 15 minutes. Remove from skillet.

Final Assembly and Baking

Transfer the browned chicken to a 9x13-inch baking dish. Top each chicken breast with 1 cup of salsa and 1 cup of shredded Cheddar cheese. Bake in a preheated oven at 375 degrees F (190 degrees C) until the cheese is bubbly and starts to brown, about 15 to 20 minutes.
