Description

This creamy chicken dish is a real treat! I've been making it for years, and it's always a hit. The combination of crispy bacon, tender chicken, and a rich white wine sauce is simply irresistible. It's perfect for a cozy dinner on a chilly evening. Serve it with mashed potatoes and your favorite greens for a complete and satisfying meal. The Dijon mustard adds a lovely tang, and the fresh parsley brightens up the flavors. This recipe is definitely one to keep in your repertoire!

Ingredients (11 ingredients)

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 piece small onion
  • 50 g smoked bacon lardons
  • 1 clove garlic
  • 2 piece skin-on chicken breasts
  • 1 tsp plain flour
  • 50 ml white wine
  • 150 ml double cream
  • 0.5 tbsp Dijon mustard
  • 0.5 bunch parsley

Preparation (7 steps)

Prepare Onion and Bacon Mixture

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the small onion to the mixing bowl and chop for 3 sec/speed 5. Add 0.5 tbsp olive oil and 0.5 tbsp butter and cook for 3 min/120°C/speed 1. Add the smoked bacon lardons and garlic clove and cook for 5 min/120°C/speed 1.

Set Aside Onion and Bacon Mixture

Scrape the onion and bacon mixture out of the mixing bowl and set aside in a bowl.

Sear Chicken Breasts

Heat the remaining 0.5 tbsp olive oil and 0.5 tbsp butter in a large non-stick frying pan over medium-high heat. Season the skin-on chicken breasts and fry, skin-side down, for 8-10 mins or until deep golden brown and crisp. Flip over and fry for 5 mins on the other side.

Combine Ingredients in Frying Pan

Add the onion and bacon mixture back to the frying pan with the chicken. Stir through the plain flour and cook for 2 mins.

Add Wine and Simmer

Pour the white wine into the frying pan, bring to the boil and simmer for a few minutes.

Finish the Sauce

Stir through the double cream and Dijon mustard in the frying pan and simmer over a low heat, uncovered, for 5 mins with the chicken skin-side up. Season to taste.

Serve

Scatter with parsley, if you like, and serve with mashed potatoes and greens.
