Description

This creamy peanut chicken is a flavorful and satisfying dish that's perfect for a weeknight meal. I've been making this recipe for years, and it's always a hit! The combination of peanut butter, coconut milk, and spices creates a rich and savory sauce that coats the chicken beautifully. Serve it with cauliflower rice for a low-carb option, or with regular rice if you prefer. It's also great with a sprinkle of fresh coriander and roasted peanuts for added flavor and texture. This dish is easy to prepare and can be ready in under an hour.

Ingredients (13 ingredients)

  • 2 tbsp avocado oil
  • 8 piece skinless boneless chicken thighs
  • 1 piece onion
  • 3 clove garlic cloves
  • 2 piece red chillies
  • 2 tsp fresh ginger
  • 2 tbsp garam masala
  • 100 g smooth peanut butter
  • 400 ml coconut milk
  • 400 g can chopped tomatoes
  • 1 bunch coriander
  • roasted peanuts
  • cauliflower rice

Preparation (3 steps)

Prepare the ingredients

Heat 1 tbsp of the oil in a deep frying pan over a medium heat. Brown the chicken in batches, setting aside once golden. Fry the onion for 8 minutes until softened. Then add the garlic, chilli and ginger and fry in the other 1 tbsp oil for 1 min. Add the garam masala and fry for 1 min more.

Combine and simmer

Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Return the chicken to the pan and add the chopped coriander. Cook for 30 mins until the sauce thickens and the chicken is cooked through.

Serve

Serve with the remaining coriander, roasted peanuts and rice, if you like.
