Description

This creamy chicken with asparagus is a delicious and easy-to-prepare main course, perfect for a family meal or a special dinner. The creamy asparagus sauce gives a fresh and sophisticated touch to the chicken, while the marinade keeps it juicy and tender. I usually prepare it in spring, when asparagus is at its best, but it can be enjoyed throughout the year. It is a dish that always triumphs at home! Also, it is an excellent way to incorporate vegetables into the diet in a tasty way. It can be accompanied with white rice or a fresh salad.

Ingredients (11 ingredients)

  • 6 piece chicken breasts
  • 0.25 cup vinegar
  • 0.5 cup milk
  • to taste pepper
  • 4 tbsp margarine
  • 1 piece chopped onion
  • 1 bunch chopped fresh asparagus
  • 0.5 cup white wine
  • 0.5 cup water
  • 1 cup liquid cream
  • to taste salt

Preparation (9 steps)

Marinate the chicken

In a bowl, mix the milk, vinegar, salt and pepper to taste. Immerse the chicken breasts in the marinade and marinate in the refrigerator for 2 hours.

Brown the chicken

Drain the marinated chicken well. Heat the margarine in a deep frying pan over medium heat. Lightly brown the chicken breasts on both sides. Remove the chicken from the pan and set aside.

Chop the onion

Introduce the chopped onion into the Thermomix glass and chop for 3 seconds at speed 5.

Sauté the onion

Add the chopped onion to the Thermomix glass and sauté for 3 minutes at 120°C at speed 1.

Add the asparagus, wine and water

Add the chopped fresh asparagus, white wine and water to the Thermomix glass. Place the reserved chicken in the Varoma container.

Steam the chicken

20 min/Varoma/Speed 1 Varoma

Place the Varoma on the Thermomix and program 20 minutes at Varoma temperature, speed 1.

Reduce the sauce

Thermomix® Setting
10 min/212°F/Speed 2 100

Remove the Varoma. Program the Thermomix for 10 minutes at 100°C, speed 2, without the measuring cup, to reduce the sauce.

Add the cream

Thermomix® Setting
1 min/194°F/Speed 1 90

Add the liquid cream to the Thermomix glass. Taste the salt and adjust if necessary. Cook for 1 minute at 90°C, speed 1.

Serve

Serve the chicken with the asparagus sauce. Garnish with whole sautéed asparagus and lemon slices.
