Description

This chicken and vegetable stir-fry with brown rice is a quick and healthy meal that's perfect for a weeknight dinner. I've been making this recipe for years, and it's always a hit with my family. The combination of chicken, chorizo, and vegetables is simply delicious. It's also a great way to use up any leftover vegetables you have in the fridge. Feel free to add other vegetables like broccoli, carrots, or snap peas. The soy sauce and red wine vinegar add a tangy flavor that complements the other ingredients perfectly. This dish is also ideal for meal prepping, as it can be easily stored in the fridge for a few days.

Ingredients (9 ingredients)

  • 1 tbsp olive oil
  • 250 g chicken breast
  • 100 g chorizo
  • 1 piece leek
  • 1 piece red pepper
  • 80 g kale
  • 1 tbsp low salt soy sauce
  • 1 tbsp red wine vinegar
  • 500 g wholegrain rice

Preparation (6 steps)

Prepare Chicken and Chorizo

Heat the olive oil in a frying pan over medium-high heat. Add the chicken breast and fry for 3 minutes, until lightly browned. Stir in the chorizo and cook for 2 minutes more, until the chorizo has released its fat. Remove the chicken and chorizo from the pan with a slotted spoon and set aside.

Sauté Leek and Red Pepper

Add the leek and red pepper to the frying pan and cook for 2 minutes, stirring frequently, until slightly softened.

Add Kale and Cook

Add the kale to the frying pan and cook for 1 minute more, until the leaves have just started to wilt at the edges.

Add Soy Sauce and Vinegar

Drizzle in the low salt soy sauce and red wine vinegar.

Heat Rice

Microwave the wholegrain rice according to package directions.

Combine and Heat Through

Scatter in the rice, breaking up any large chunks with a wooden spoon. Stir the chicken and chorizo back into the pan and toss everything together to combine. Cook for 3 minutes until the rice is heated through.
