Description

This chicken in tomato sauce, inspired by Guadalajara cuisine, is a dish that evokes memories of family celebrations. Ingredients (15 ingredients)

  • 1 piece Chopped chicken
  • 1 piece Onion
  • 1 clove Garlic
  • 1 rama Parsley
  • 1 piece Carrot
  • 1 kilogramo Roasted and peeled tomato
  • 1 piece Onion
  • 2 dientes Garlic
  • 0.5 cup Vinegar
  • 1 cucharadita Oregano
  • 0.5 cucharadita Marjoram
  • 1 cucharada sopera Sugar
  • 1 can Pickled jalapeño peppers (optional)
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (7 steps)

Chicken cooking

Thermomix® Setting
30 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Place the chopped chicken in the Thermomix bowl. Add the onion (1 unit) cut into quarters, the garlic clove, the parsley sprig and the carrot (1 unit) peeled and chopped. Cover with water up to the maximum mark. Season with salt. Program 30 Min./100°C/Reverse rotation/Spoon speed.

Drain and reserve the chicken

Once cooking is finished, drain the chicken and reserve the broth for another preparation. Reserve the cooked chicken.

Sauce preparation (first part)

Thermomix® Setting

In the Thermomix bowl, place the onion (1 unit) cut into quarters, the 2 garlic cloves, the vinegar (½ cup) and the juice from the can of pickled jalapeño peppers. Crush 20 Sec./Speed 7.

Strain the sauce

Pass the sauce through a fine sieve to remove the larger pieces. Reserve the strained sauce.

Sauce preparation (second part)

Thermomix® Setting
30 Seg./Velocidad 10

Put the strained sauce back into the Thermomix bowl. Add the roasted and peeled tomato (1 kilogram), oregano (1 teaspoon), marjoram (½ teaspoon), sugar (1 tablespoon), salt and pepper (1 pinch). Crush 30 Sec./Speed 10.

Fry the chicken in the sauce

In a separate pan, heat oil. Bathe the chicken pieces in the tomato sauce and fry them until golden brown on all sides. Remove the chicken from the pan and reserve.

Serve the chicken

Serve the chicken on an oval plate and cover it with the rest of the sauce. Garnish with strips of pickled jalapeño peppers (optional). Serve with boiled potatoes.
