Description

This southern style fried chicken is a recipe I've perfected over time. The key is the crispy batter and juicy interior. Although traditionally fried in peanut oil, sunflower oil works wonderfully and is more accessible. Preparation is simple, but requires a little patience to achieve the perfect cooking. Ideal for a family meal or an informal celebration. My friends love it when I make it! It is neither vegan nor vegetarian, but it is a delight for chicken lovers.

Ingredients (7 ingredients)

  • 1 piece Whole chicken
  • 240 g Wheat flour
  • 240 ml Whole milk
  • 1 piece Egg
  • to taste Salt
  • to taste Ground black pepper
  • Sunflower oil

Preparation (6 steps)

Prepare the chicken

Cut the whole chicken into pieces: wings, thighs and breasts. The breasts can be cut into two portions each. Reserve the carcasses to make broth. Salt and pepper each piece of chicken generously.

Prepare the batter

In a bowl, mix 240 g of wheat flour with salt and ground black pepper. In another bowl, beat 1 egg with 240 ml of whole milk.

Coat the chicken

Pass each piece of chicken first through the egg and milk mixture, and then through the flour. Make sure there is a thin batter. Reserve.

Heat the oil

Pour sunflower oil into a wide frying pan or pot. Heat the oil over medium-high heat until it reaches a temperature of approximately 160°C. It is important to maintain this constant temperature during frying.

Fry the chicken

Fry the chicken pieces in batches, making sure not to overload the pan. Turn them occasionally so they cook evenly on all sides. The breasts will be ready in about 15 minutes, while the rest of the pieces will need about 20 minutes.

Drain and serve

As the pieces are ready, place them on a tray on kitchen paper to remove excess oil. Let stand for 5 minutes before serving.
