Description

This crispy fried chicken is a real comfort food! The marinade in sherry and spices gives it a unique and irresistible flavor. The preparation takes a bit of time, but the result is a chicken with a golden and crispy skin and a tender and juicy meat. Perfect for a family dinner or a party with friends. I prepare it often and it never disappoints! A tip: serve it with a simple green salad for a complete and balanced meal.

Ingredients (7 ingredients)

  • 1 piece whole chicken
  • 2 tbsp dry sherry
  • 5 tbsp cornstarch
  • 2 tbsp brown sugar
  • 2 tbsp white vinegar
  • 2 tbsp coarse salt
  • 50 g anise seeds

Preparation of flavored water

Thermomix® Setting
30 min/212°F/Speed 1 100

Pour water, coarse salt and anise seeds into the Mixtopf. Bring to a boil for 30 minutes at 100°C in Stufe 1.

Cooling and immersion of the chicken

Allow the flavored water to cool completely. Thoroughly clean the chicken, dry it both internally and externally, and immerse it in the cooled water for 2 and a half hours or 3 hours.

Drying the chicken

Hang the chicken to drain the water completely and dry it thoroughly with absorbent paper.

Preparation of the marinade

Pour the dry sherry, cornstarch, brown sugar and white vinegar into the Mixtopf. Mix for 20 seconds at Stufe 3.

Marinating the chicken

Spread the marinade evenly over the chicken, both inside and out.

Frying the chicken

In a large pan, heat 1.5 liters of seed oil over high heat. When the oil is very hot, immerse the chicken and fry until golden brown, simultaneously collecting the hot oil with a ladle and pouring it inside the chicken.

Cooking the breast

Remove the chicken wings to expose the breast part. Immerse the chicken upside down in the oil for 1-2 minutes to cook the breast better.

Cutting and serving

Remove the chicken from the oil, cut it into pieces (bones included) diagonally and serve with fine salt, previously toasted in a pan.
