Description

These cauliflower meatballs are a delicious and healthy option to enjoy as an appetizer or main course. Grated cauliflower is mixed with millet, garlic, spices and a spicy touch to create balls full of flavor. Flaxseed flour and breadcrumbs help give them the perfect consistency. What makes this recipe special is the spicy coconut milk, turmeric and Sriracha sauce, which gives it an exotic and delicious touch. They are perfect for a vegetarian meal full of flavor and can be prepared in advance. Go ahead and try them, you will love them!

Ingredients (16 ingredients)

  • 3 tazas grated cauliflower
  • 0.5 cup cooked millet
  • 2 dientes grated garlic
  • 0.25 cup flaxseed flour with chia
  • 0.25 cup breadcrumbs
  • 1 piece egg
  • 1 tbsp grated cheese
  • 1 tsp spicy paprika
  • 0.5 tsp ground cumin
  • to taste salt
  • 1 tbsp butter
  • to taste ground pepper
  • 1 tsp ground turmeric
  • 1 tsp Sriracha
  • 1 tsp spicy paprika
  • 200 ml coconut milk

Preparation (9 steps)

Grate the cauliflower

Thermomix® Setting

Place 3 cups of cauliflower florets in the glass and grate for 5 Seg./Stufe 5. Pour the grated cauliflower into a clean kitchen towel, add 1 tsp of salt and wait 10 minutes. Squeeze the cloth to extract as much water as possible.

Mix the cauliflower with spices

In a bowl, add 1 tsp of spicy paprika, ½ tsp of ground cumin, 2 cloves of grated garlic, salt and pepper to taste to the grated cauliflower. Mix well to integrate all the flavors.

Incorporate the rest of the ingredients

Add ½ cup of cooked millet, ¼ cup of flaxseed flour with chia, ¼ cup of breadcrumbs, 1 egg and 1 tbsp of grated cheese to the cauliflower bowl. Mix all ingredients well.

Knead the mixture

Knead with your hands until you obtain a manageable and moldable dough. If the mixture is too wet, add a little more flaxseed flour or breadcrumbs. If it is dry, add a little more melted butter.

Form the meatballs

Form small balls with the dough and place them on a plate. Put the meatballs in the fridge for 30 minutes to harden.

Cook the meatballs

Heat 1 tbsp of butter in a frying pan over medium heat. Fry the meatballs until golden brown on all sides. Remove and reserve.

Prepare the spicy sauce

In the glass, pour 200 ml of coconut milk, 1 tsp of ground turmeric, 1 tsp of Sriracha and 1 tsp of spicy paprika. Mix 5 Seg./Stufe 4.

Cook the sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Program 5 Min./100°C/Stufe 2. Once it boils, turn off the Thermomix.

Serve

Serve the cauliflower meatballs with the spicy sauce. Sprinkle with chopped coriander if desired.
