Description

Potatoes with herb curd is a quick and healthy main course, prepared in the Thermomix®. This vegetarian and gluten-free recipe combines potatoes with a fresh curd dip made from low-fat curd, herbs and lemon juice. In just 35 minutes, of which 10 minutes are active working time, a delicious meal for 4 people is created. Ideal for light cuisine or as a family meal.

Ingredients (6 ingredients)

  • 1200 g Potatoes
  • 2 TL Salt
  • 500 g Low-fat curd
  • 3 EL chopped herbs (e.g. chives and parsley)
  • 2 TL Lemon juice
  • 3 EL Sparkling water

Preparation (3 steps)

Cook potatoes

Thermomix® Setting
20-25 min/Varoma/Speed 1 Varoma

Wash, peel and place 1200g potatoes in the simmering basket. Add 1200ml water and 2 tsp salt to the mixing bowl. Insert the simmering basket and cook for 20-25 min/Varoma/speed 1 until the potatoes are soft.

Prepare curd dip

Thermomix® Setting
10 sec/Speed 3/keine

Add 500g low-fat curd, 3 tbsp chopped herbs, 2 tsp lemon juice and 3 tbsp sparkling water to the mixing bowl and stir for 10 sec/speed 3.

Serve

Drain the potatoes and serve with the curd dip.
