Description

This simple dish of boiled potatoes with a fresh herb curd is quick to prepare and is excellent as a light main course or side dish. The curd is refined with fresh herbs, lemon juice and mineral water. The recipe is vegetarian, gluten-free and high in protein. Preparation time approx. 35 minutes, sufficient for 4 servings. Ideal for a quick and healthy meal.

Ingredients (6 ingredients)

  • 1.2 kg Potatoes
  • 2 TL Salt
  • 500 g Low-fat curd
  • 3 EL chopped herbs
  • 2 TL Lemon juice
  • 3 EL Mineral water

Preparation (5 steps)

Prepare potatoes

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Wash 1.2 kg of potatoes and place in the steamer basket. Add 2 tsp salt and 1 liter of water to the mixing bowl. Insert steamer basket.

Drain and peel potatoes

After the cooking time, remove the steamer basket with the spatula and drain the potatoes. Let cool briefly and peel.

Chop herbs

Thermomix® Setting
3 sec/Speed 8

Put 3 tablespoons of chopped herbs (e.g. chives and parsley) into the mixing bowl and chop for 3 sec./speed 8. Transfer.

Prepare curd

Thermomix® Setting
20 sec/Speed 3

Put 500 g low-fat curd, the chopped herbs, 2 tsp lemon juice and 3 tbsp mineral water into the mixing bowl and stir for 20 sec./speed 3.

Serve

Serve the peeled potatoes with the herb curd.
