Description

With the Thermomix®, Hasselback potatoes succeed as a hearty side dish or vegetarian main course. Firm-cooking potatoes, Parmesan, butter and thyme ensure a special taste. The preparation takes about 80 minutes, of which 30 minutes are active work time. The recipe is designed for 4 servings and is suitable as a festive oven dish or for a hearty family meal.

Ingredients (7 ingredients)

  • 8 Stück medium-sized potatoes (firm-cooking)
  • 60 g Parmesan in one piece
  • 50 g Butter
  • 3 EL Olive oil
  • Salt
  • Pepper
  • 4 Stiele Thyme

Preparation (5 steps)

Prepare potatoes

Preheat oven to 200°C (convection: 180°C). Wash 8 medium-sized potatoes thoroughly and rub dry. Cut each potato deeply several times, but do not cut through (this works well if you place the potato between two wooden sticks/skewers for cutting). Spread potatoes on a baking sheet with baking paper.

Prepare Parmesan

Put 60 g Parmesan in one piece into the mixing bowl and chop for 10 sec./speed 6. Transfer.

Melt butter

Put 50 g butter in the mixing bowl and melt for 3 min./50°C/speed 2.

Add oil

Add 3 tbsp olive oil to the melted butter in the mixing bowl and stir for 5 sec./speed 3.

Season and bake potatoes

Shave Parmesan into thin slices and stick into the cuts (or coarsely grate cheese and sprinkle over it). Brush potatoes with the butter-oil mixture, salt, pepper and bake in the preheated oven for 50-60 minutes. Sprinkle with 4 sprigs of thyme leaves and serve. Tip: Bake the potatoes some time beforehand, reheat them well in the oven before serving.
