Description

These little packages of pork and chicken in adobo are a delight of Mexican cuisine. The meat, marinated in a chili and spice sauce, is steamed inside mixiote leaves (or baking paper), which gives it a unique flavor and texture. I often prepare them for family parties, they are always a success! The combination of pork and chicken, along with the spicy touch of the adobo, is simply irresistible. Also, they can be prepared in advance and cooked just before serving. If you can't find mixiote leaves, baking paper works great. Go ahead and try this recipe, you will love it!

Ingredients (20 ingredients)

  • 500 gramos cubed pork meat
  • 500 gramos chicken in pieces
  • 6 hojas for mixiote or waxed paper or aluminum
  • 3 piezas chopped nopal
  • 2 manojos spring onion
  • salt
  • pepper
  • kitchen twine
  • 3 piezas guajillo chili
  • 2 piezas ancho chili
  • 2 dientes garlic
  • 1 trozo onion
  • 1 tsp cumin
  • 1 tsp thyme
  • 1 tsp marjoram
  • 1 tsp dried oregano
  • 3 clavos de olor cloves
  • salt
  • 2 tbsp white vinegar
  • water for blending

Preparation (6 steps)

Hydrate the chilies

In a pot, heat water until it boils. Add the guajillo and ancho chilies (without stem, seeds or veins) and boil for 5 minutes until softened. Drain the chilies.

Prepare the adobo

Thermomix® Setting

Place the hydrated chilies in the Thermomix bowl. Add the garlic, the piece of onion, cumin, thyme, marjoram, dried oregano, cloves, salt to taste, and white vinegar. Add a little water (approximately 50 ml) to facilitate blending. Crush 2 Min./Stufe 10 until obtaining a thick and homogeneous sauce.

Marinate the meats

In a large bowl, mix the pork cubes and chicken pieces. Pour the adobo over the meats and mix well so that they are completely impregnated. Cover the container and let it marinate in the refrigerator for at least 1 hour, ideally overnight.

Assemble the mixiotes

Spread the mixiote sheets (or waxed paper or aluminum). Place a portion of marinated meat in the center of each sheet. Add chopped nopales and spring onion to taste. Wrap the meat with the sheet, forming a package, and tie firmly with kitchen twine.

Steam

Thermomix® Setting
90 min/Varoma/Speed 1 Varoma

Place 500 ml of water in the Thermomix bowl. Place the mixiotes in the Varoma. Program 90 Min./Varoma/Stufe 1 to steam. Verify that the meat is well cooked and soft. If necessary, cook for longer.

Serve

Carefully remove the mixiotes from the Varoma. Open the packages carefully, removing the thread. Place on individual plates or serve inside the same sheet, to taste. Serve hot.
