  • 1 kilogramo Pork steak
  • 1 kilogramo Potatoes
  • 40 mililitros Oil
  • 8 unidades Pasilla chile
  • 2 unidades Ancho chile
  • 0.5 piece White onion
  • 1 clove Garlic
  • 1.5 litros Water
  • 3 gramos Salt

Preparation (8 steps)

Preparation of the chiles

Open the 8 pasilla chiles and the 2 ancho chiles, remove the seeds and veins. This will reduce the spiciness of the sauce.

Cooking the chiles

Place the clean chiles in the Thermomix glass along with ½ white onion in quarters, 1 clove of garlic and 1½ liters of water. Cook for 10 Min./100°C/Stufe 1.

Crushing the sauce

Once the chiles are cooked, crush the sauce for 1 Min./Stufe 10. Check the consistency and crush a few more seconds if necessary.

Preparation of the potatoes

Peel and cut 1 kg of potatoes into small pieces and reserve.

Sautéing the potatoes

10 min/Varoma/Linkslauf Speed 1 Varoma Reverse

Add 40 ml of oil to the Thermomix glass. Incorporate the cut potatoes and sauté for 10 Min./Varoma/Linkslauf Stufe 1. Stir with the spatula occasionally to ensure even cooking.

Cooking the pork

15 min/Varoma/Linkslauf Speed 1 Varoma Reverse

Add 1 kg of pork steak cut into pieces to the Thermomix glass along with the potatoes. Cook for 15 Min./Varoma/Linkslauf Stufe 1. Stir with the spatula occasionally.

Incorporation of the sauce and salt

Pour the pasilla chile sauce over the pork and potatoes through a strainer. Add 3 grams of salt. Mix well with the spatula.

Boil over high heat

Let the preparation boil for 25 Min./100°C/Linkslauf Stufe 1, or until the potatoes are soft. Stir with the spatula occasionally.
