Description

This Port wine chicken thighs dish is a recipe that I often make at home. The combination of chicken with the sweetness of prunes and dried cranberries, along with the touch of Port wine, creates a delicious and sophisticated sauce. It is perfect for a special meal or even for a weekday dinner if you want something a little more elaborate. The preparation is simple and the result is a tasty and comforting dish. Ideal to enjoy in autumn or winter!

Ingredients (9 ingredients)

  • 4 piece Chicken thighs
  • 2 piece Purple onion
  • 6 piece Pitted prunes
  • 50 g Dried cranberries
  • 200 ml Port wine
  • Water
  • to taste Salt
  • to taste Ground black pepper
  • Extra virgin olive oil

Preparation (6 steps)

Chop the onion

Thermomix® Setting

Peel the purple onions, cut them in half and then into julienne strips. Put the onions in the bowl and chop for 3 seconds at speed 5.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add a splash of extra virgin olive oil to the bowl and sauté the onion for 3 minutes at 120°C at speed 1.

Add the chicken, plums and cranberries

Add the chicken thighs, pitted prunes and dried cranberries to the bowl. Add salt and pepper to taste.

Cook the chicken

Thermomix® Setting
40 min/212°F/Speed 1 100

Add the Port wine and water to cover the chicken. Cook for 40 minutes at 100°C at speed 1.

Crush the sauce

Thermomix® Setting
30 sec/Speed 8

Remove the chicken thighs from the bowl. Crush the sauce for 30 seconds at speed 8. If a finer sauce is desired, pass it through a strainer.

Finish cooking

Thermomix® Setting
5 min/212°F/Speed 1 100

Correct the seasoning of the sauce. Incorporate the chicken back into the bowl and cook for 5 minutes at 100°C at speed 1.
