Description

This lentil stew with vegetables is a comforting and nutritious recipe, perfect for cold days. I have been preparing it for years and it is always a success at home. The combination of lentils, courgette, carrot, sweet potato and spices such as turmeric and garam masala creates a dish full of flavour and health benefits. The touch of miso at the end gives it a delicious umami. It is ideal for a family meal or to prepare in advance and enjoy during the week. Furthermore, it is a very complete and economical vegetarian option. Give it a try!

Ingredients (16 ingredients)

  • 1 container lentils
  • 2 piece courgettes
  • 2 piece carrots
  • 2 piece sweet potatoes
  • 2 piece onions
  • 4 dientes garlic
  • 1 can fried tomato
  • 1 ramita fresh rosemary
  • 1 trozo ginger
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tbsp miso
  • 1 unas green beans
  • 1 al gusto salt
  • 1 al gusto pepper
  • 1 chorrito olive oil

Preparation (9 steps)

Flavour the spices and garlic

In the Thermomix bowl, add the turmeric, garam masala, fresh rosemary, peeled ginger and unpeeled garlic cloves. Program 2 Min./120°C/Speed 1 to lightly toast the spices and release their aromas.

Add the vegetables

Peel and cut the onions, courgettes, carrots and sweet potatoes into medium pieces. Add to the Thermomix bowl and program 5 Sec./Speed 4 to chop the vegetables.

Sauté the vegetables

Add a splash of olive oil, salt and pepper to taste. Program 8 Min./120°C/Speed 1 to sauté the vegetables.

Add the fried tomato and rosemary

Add the small can of fried tomato and the sprig of fresh rosemary to the bowl. Program 2 Min./100°C/Speed 1.

Incorporate the water and lentils

Add 1.5 litres of hot water and the glass of lentils to the Thermomix bowl. Stir well with the spatula.

Cook the lentils

Program 40 Min./100°C/Speed 1/Reverse. Place the basket on the lid to prevent splashing.

Add the green beans

Add the green beans to the Thermomix bowl. Program 20 Min./100°C/Speed 1/Reverse. Place the basket on the lid to prevent splashing.

Add the miso

Thermomix® Setting
1 min/194°F/Velocidad 1 90 Reverse

Dissolve the tablespoon of miso in a little hot water. Add to the Thermomix bowl and stir well with the spatula. Program 1 Min./90°C/Speed 1/Reverse.

Adjust the seasoning and serve

Taste and adjust the salt and pepper to taste. Serve hot.
