Description

This potato bread with fried onions, prepared in the Thermomix®, is a hearty and vegetarian bread for any occasion. The main ingredients are potatoes, flour, milk and of course fried onions. With a preparation time of 180 minutes (of which 20 minutes is active work time) you get about 12 servings. Ideal as breakfast, finger food or appetizer for parties and social gatherings.

  • 500 g Potatoes
  • 100 ml Milk
  • 1 Würfel Yeast
  • 1 TL Sugar
  • 500 g Flour
  • 2 TL Salt
  • 50 g Fried onions

Preparation (6 steps)

Cook potatoes

Peel 500 g potatoes, quarter them and place them in the steamer basket. Fill 1000 ml water into the mixing bowl, insert steamer basket and steam for 25 min./Varoma/speed 1. Remove the steamer basket and let the potatoes cool down a little.

Purée potatoes

Place cooked potatoes in the mixing bowl and purée for 15 sec./speed 4.

Prepare yeast

3 min/99°F/Speed 2 99°F

Add 100 ml milk, 1 cube yeast and 1 tsp sugar to the puréed potatoes in the mixing bowl and stir for 3 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add 500 g flour, 2 tsp salt and 50 g fried onions and knead for 3 min./kneading setting to form a dough.

Let the dough rise

Place the dough in a bowl and let it rise, covered, in a warm place for about 1 hour until the volume has doubled.

Shape and bake bread

Knead the dough again on a floured work surface and shape into a loaf of bread. Place on a baking tray lined with baking paper and let rise for another 30 minutes. Preheat the oven to 200°C top/bottom heat. Brush the bread with a little milk and bake in the preheated oven for about 40-45 minutes.
