Description

This hearty potato salad with warm broth is prepared in the Thermomix® and is an ideal side dish or a light main course. The main ingredients are waxy potatoes, onions and a strong meat broth, refined with mustard and vinegar. In just 45 minutes, this creates a vegetarian dish for about 6 servings. Particularly suitable as a warming meal in winter or as part of a festive Christmas menu.

Ingredients (11 ingredients)

  • 1000 g waxy potatoes
  • nach Geschmack Salt
  • 2 Stück Onions
  • 250 ml Meat broth
  • 1 EL Mustard
  • 1 Prise Sugar
  • 2 EL White wine vinegar
  • 2 EL Sunflower oil
  • nach Geschmack Pepper
  • nach Geschmack Nutmeg
  • 1 EL chopped parsley

Preparation (6 steps)

Prepare potatoes

Wash 1 kg waxy potatoes and cook unpeeled in a pot with salted water for about 20 minutes until done. Rinse under cold water, peel and cut into thin slices. Place the potato slices in a large bowl.

Chop onions

Peel and quarter 2 onions and place in the mixing bowl. Chop 3 sec./speed 5. Use the spatula to scrape down from the edge.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp sunflower oil to the onions in the mixing bowl and sauté 3 min./120°C/speed 1.

Prepare broth

Thermomix® Setting
3 min/212°F/Speed 2 100

Add 250 ml meat broth, 1 tbsp mustard, 1 pinch of sugar and 2 tbsp white wine vinegar to the onions in the mixing bowl. Heat 3 min./100°C/speed 2.

Mix potato salad

Pour the warm broth over the potato slices in the bowl and mix carefully. Let it steep briefly.

Season and Serve

Season the potato salad with salt, pepper and nutmeg. Stir in 1 tbsp chopped parsley and serve.
