Description

This dish is a wonderful combination of simple ingredients that are made special by the flavors of lime and chili. The potatoes, combined with the sweet onion compote, are a real treat. I like to make it as a side dish to grilled food or simply as a light lunch. The preparation is straightforward and the flavors harmonize perfectly. A touch of cinnamon rounds it all off. Ingredients (9 ingredients)

  • 4 piece Potatoes
  • 1 piece Sweet onion
  • 1 c. à soupe Peanuts
  • 1 piece Lime
  • 1 branche Coriander
  • 1 c. à soupe Olive oil
  • 1 pinch Chili pepper
  • 1 pinch Cinnamon
  • 1 pinch Flower of salt

Preparation (5 steps)

Chop and sauté onions

Peel, quarter the onion and put it in the mixing bowl. Chop for 3 sec./speed 5. Then add the olive oil and sauté for 3 min./120°C/speed 1.

Cook potatoes

15 min/Varoma/Speed 1 Varoma

Peel the potatoes, cut them into equally sized pieces and put them in the simmering basket. Fill 500 ml of water into the mixing bowl, insert the simmering basket and cook for 15 min./Varoma/speed 1. The cooking time may vary depending on the size of the potato pieces.

Prepare lemon fillets

While the potatoes are cooking, fillet the lime so that only the pulp without the skin remains.

Season onion compote

After the onion compote is ready, season with flower of salt, Espelette pepper and cinnamon powder. Add the lime juice and stir for 10 sec./speed 2.

Arrange

Halve the cooked potatoes and top with a spoonful of onion compote while still warm. Garnish with a quarter of lime, peanuts and a coriander leaf.
