This chicken in creamy white wine sauce is a comforting and flavorful dish, perfect for a cozy dinner. I've been making this recipe for years, and it's always a hit! The chicken breasts are pan-fried to golden perfection and then simmered in a luscious sauce made with white wine, chicken stock, and a touch of cream. The addition of herbs and garlic elevates the flavor profile, making it a truly satisfying meal. Serve it with mashed potatoes or rice for a complete and delicious experience. It's especially wonderful during the cooler months, bringing warmth and joy to the table.

Ingredients (10 ingredients)

  • 4 piece chicken breasts
  • 2 tbsp olive or rapeseed oil
  • 1 piece onion
  • 3 clove garlic cloves
  • 1 tbsp dried mixed herbs
  • 1 tbsp plain flour
  • 200 ml white wine
  • 250 ml chicken stock
  • 125 ml double cream
  • chopped parsley

Preparation (10 steps)

Season and sear the chicken

Season the chicken breasts all over with salt and freshly ground black pepper. Heat 2 tbsp of the oil in a large lidded frying pan over a medium heat and fry the chicken, skin-side down, for 8-10 mins until the skin is golden. Turn the chicken over and cook for 6-8 mins more until golden all over. Remove to a plate and set aside.

Chop the onion

Place the onion in the mixing bowl and chop for 3 seconds on speed 5.

Sauté the onion

If the pan is dry, drizzle in another 1 tbsp oil, then add the chopped onion to the mixing bowl and sauté for 3 minutes at 120°C on speed 1.

Chop the garlic

Add the garlic cloves to the mixing bowl and chop for 3 seconds on speed 7.

Add herbs and cook

Add the dried mixed herbs to the mixing bowl and cook for 1 minute at 120°C on speed 1.

Add flour and cook

Add the plain flour to the mixing bowl and cook for 1 minute at 120°C on speed 1.

Add wine and simmer

Pour in the white wine and simmer for 2 minutes at 100°C on speed 1, without the measuring cup, until the alcohol has evaporated.

Add stock and simmer

Stir in the chicken stock until everything is combined, then add the chicken breasts to the mixing bowl, skin-side up. Cover and simmer for 15 minutes at 100°C on speed 1 until the sauce has thickened slightly and the chicken is cooked through.

Add cream and simmer

Stir in the double cream and return to a simmer for 2 minutes at 90°C on speed 1.

Remove from the heat and scatter over the chopped parsley, if using.
